But, Not all olive oils in the market are the same. They are differentiated into different grades because of their quality. It happens due to the quality of raw materials and different production methods.

Basically, there are five types of olive oil available right now. They are…

It is the best grade olive oil. It is processed precisely. The taste and chemical composition of this olive oil is maintained at a high level.

It is extracted from the fresh olive fruit usually harvested within 24 hours. The processing method is free of chemical processes and excessive heat. The taste and aroma of extra virgin olive oil should be accurate and defect-free. The free fatty acid or acidity level of extra virgin olive oil must be less than 0.8%. (Ref: Wikipedia)

It retains the True Olive taste.

02. Virgin olive oil

As its name, the quality of virgin olive oil is slightly lower than extra virgin olive oil. The production method virgin olive oil and extra virgin olive oil is the same but the production standard is not rigid for virgin olive oil.

The acidity level of virgin olive oil should be 0.8% to 2%.

03. Refined Olive Oil

According to the International Olive Oil Council, “Refined olive oil is the olive oil obtained from virgin olive oils by refining methods which do not lead to alterations in the initial glyceridic structure. It has a free acidity, expressed as oleic acid, of not more than 0.3 grams per 100 grams and its other characteristics correspond to those fixed for this category in the IOC standard”.

Refined olive oil is extracted by using some agents like acids and alkalis. And heat is also used for this processing.

04. Olive Pomace Oil

This olive oil is processed from the byproduct of extra virgin olive oil like olive skins, seeds, and pulp. After the completion of mechanical olive oil extraction, almost 5%-8% of the oil still remains in the pulp. And this olive oil is collected by using solvents. This olive oil is quality less and should not be used for consumption.

05. Lampante Oil

The word “Lampante” comes from the use of this oil as a fuel of lamp. This type of olive oil is completely worse in quality and always has an unpleasant taste and aroma. It is not for consumption. Its acidity level is too high. It is extracted from the bad or damaged fruit with a poor processing method.
